Intense, rich, deeply sweet aroma: dark chocolate, aromatic wood, a hint of fruit. In the cup balanced acidity, silky to lightly syrupy mouthfeel, and continued dark chocolate with a sweetly tart orange-toned fruit that becomes more pronounced as the coffee cools. Some chocolate carries into a rich, very slightly astringent finish.

 This coffee consists entirely of peaberries, a kind of bean that results when the coffee fruit develops a single, oval bean rather than the usual pair of flat-sided beans. Peaberries usually produce a somewhat different (often better) cup than normal beans from the same crop, from which they may or may not be separated during grading. Kimel Plantation or Estate is a large farm founded by Australian expatriates but now owned and operated by local tribal groups who claim traditional ownership of the land. It is located in the Wahgi Valley, near the town of Mount Hagen. Founded in 1990, Lexington Coffee is an award winning artisan roasting company based in Virginia. Who Should Drink It: Should make a particularly good French-press coffee: rich, deep, with the chocolate complicated by an orangy fruit.
