This is a washed grade 2 Ethiopian coffee from Aricha washing station in the Yirgacheffe region of Ethiopia. THE PRODUCERS The coffee was cultivated by some 650 smallholder farmers in the town and surrounding area of Aricha, Yirgacheffe district. These farmers occupy an average of 2ha land each at altitudes of between 1,900 & 2,100masl and deliver coffee cherries to Aricha washing station, managed by Cherab na Betesebu. THE PROCESS Ripe cherries are delivered to the wetmill for careful sorting and pulping, before fermentation for 36-48 hours, depending on the climactic conditions. After this point the parchment coffee is thoroughly washed and graded by bean density before being dried in the sun on raised African beds for 12 - 15 days (until the ideal moisture level has been reached). In the daytime the parchment needs to be raked and turned peri- odically to ensure a consistent drying process. The coffee is also covered between 12pm and 3pm to protect it from the hot sun, and at night time to protect it from rainall and moisture. Once the coffee has dried to the right level it is transported to Addis Ababa for dry-milling, grading, intensive sorting and handpick- ing, before being bagged in GrainPro for export. THE REGION The 'kebele' (village) of Aricha is in Yirgacheffe district, in the ‘Southern Nations, Nationalities & Peoples’ (SNNP) region of Ethiopia. Over a number of years the region has developed a distinguished reputation for fine coffees, producing some of the most sought-after micro lots in the world. The combination of high altitude (up to 2,200m in some areas), fertile soil, consistent and plentiful rains, and an abundance of local knowledge are all contributing factors to the high status of Yirgacheffe coffees. The indigenous ‘heirloom’ varietals - which grow wild in Ethiopia - are responsible for the unique flavor notes which make for an unusual but beautifully refined cup, characterized by strong citric acidity, sweet chocolate and floral/herbal notes of lavender, jasmine, bergamot and thyme.

Cup Characteristics: This coffee cups with low acidity and medium body and is an almost necessary part of the best known coffee blend in the world: MOCHA-JAVA. It offers relatively low acidity, smooth and well-balanced cup that is often more acidic than the Sulwesi or Sumatra and has a bit of a spicier flavor. This Arabica Java Estate coffee is from the Island of Java, Indonesia. From the diverse and very traditional island, there are many different qualities available. It is home to the first commercial coffee plantations in the world on the East end of Java on the IJEN Plateau surrounded by 3 different and active volcanos. Java PTP Plantation Arabica: These coffees are very known in the Specialty Coffee Industry, with production to about 2,500 tons and the crop period is between June and October. . Indonesia was introduced to coffee by the Dutch in the mid-seventeenth century. It is home to the first commercial coffee plantations in the world. The first coffee production sold was in 1712 in Amsterdam, The Netherlands. Coffee production expanded well during these early days; however, in 1877, the coffee plantations were wiped out by a coffee root disease forcing the country to replant new coffee trees. Most new coffee plants came from Africa and were primarily Robusta Beans, because these were more root disease resistant. Today Indonesia is still a major producer of Robusta Beans. However 10 to 15% of the Coffees produced in Indonesia are Arabica beans. The best growing regions for the Arabica varieties are on the islands of Sumatra, Sulawesi, Java, Flores, and Bali. Indonesian Arabica beans are traditionally strong, complex flavored, with a syrupy quality and often a balanced acidity.

Nguvu is a blend of coffees from smallholder cooperatives in the Murang'a district, in Kenya's Central Province. Our fresh-crop 2019 Nguvu comes from Ruthaka Kamuchuni, Ruthaka Mukui, Mwirua Riakiania, Mwirua Kiambwe (the first part of the name is the cooperative and the second part is the factory, or mill). Murang'a is considered the traditional home of the Kikuyu tribe, which currently makes up 22 percent of Kenya's population. The area's beautiful red, loamy soil and startlingly high altitudes contribute to a juicy, berry-forward cup. These coffees are typically grown between 1,350 and 1,800 masl. Very high-quality coffees often derive from small co-ops and may be auctioned as separate lots. All of Kenya's coffees are graded primarily by screen size (a measure of the size of the bean, with larger being more prized) immediately after milling. The coffees then proceed to the weekly auction at the Nairobi Coffee Exchange. AA is the top grade based on screening. After grading, the quality distinction "Top" or "Plus" indicates that a minimal number of small defects were allowed, as long as hey have no effect on the cup. Cupping notes: A standout lot. Intense, rich, deeply sweet aroma: dark chocolate, aromatic wood, a hint of fruit. In the cup balanced acidity, silky to lightly syrupy mouthfeel, and continued dark chocolate with a sweetly tart orange-toned fruit that becomes more pronounced as the coffee cools. Some chocolate carries into a rich, very slightly astringent finish. This coffee consists entirely of peaberries, a kind of bean that results when the coffee fruit develops a single, oval bean rather than the usual pair of flat-sided beans. Peaberries usually produce a somewhat different (often better) cup than normal beans from the same crop, from which they may or may not be separated during grading. Our Tanzania Peaberry Northern Select + is produced by a grouping of small farm holders in Northern Tanzania at 3,000 – 5,500 ft elevation. The lot is comprised of Bourbon and Kent varieties and is washed and sun dried. In the cup the our Tanzania Peaberry Northern Select + has a citrusy notes and a very good acidity and body. Peaberry (PB) is a naturally occurring selective process, that is more common at higher altitudes. When a coffee cherry forms it normally consists of two halves that together form a single bean. Peaberries occur when only one half or lobe develops. These abnormal beans (sometimes up to 10% of a crop based on genetics of tree and environment) are usually sorted out during the milling process. Roasters sometimes call them “pearl” coffee, and many roasters find that the peaberry coffee produces a more intense taste as flavors are amplified due to the smaller bean. The higher acidity is perfectly suited for African coffees, especially Tanzania. Our Tanzania Peaberry Northern Select + is a 100% peaberry. Harvest runs from October to February, varying with respect to each farm’s elevation. Tanzania borders a few of the great East African coffee producers, namely Burundi, Kenya, Malawi, Rwanda and Uganda. Here cooperative growing is the norm with independent, small farms accounting for approximately 90% of the annual production. Practically all of Tanzania’s exported coffee is of the washed type, and although there is a small contingent of robusta grown at lower altitudes, the vast majority is arabica. Tanzania coffee farmers can also utilize specialized services and receive education in modernized agricultural made available through the Tanzania Coffee Research Institute, which was founded as a non-profit in 2000 to assist the nation’s approximately 2.4 million coffee growers.
